Coconut Lentils with Rice Recipe

Ingredients: 1 tablespoon canola oil, 6 green onions, chopped, 1 tablespoon minced fresh gingerroot, 2 garlic cloves, minced, 1/4 teaspoon

crushed red pepper flakes, 1-1/2 cups dried lentils, rinsed, 1 teaspoon ground turmeric, 1/2 teaspoon salt, 5-1/2 cups vegetable

stock, 2 large tomatoes, chopped, 1/2 cup flaked coconut, 2 tablespoons minced fresh mint, 3 cups hot cooked rice, 1/3 cup plain Greek

yogurt. Heat the oil in a big saucepan over medium heat. Saute the green onions, ginger, garlic, and pepper flakes for two to four

minutes, or until the onions are soft. Add the lentils, stock, turmeric, and salt; heat until boiling. Lower the heat and cook the lentils,

covered, for 25 to 30 minutes, stirring often, until they become soft. Add mint, coconut, and tomatoes and stir. Top with yogurt and serve over rice.
