Cocoa Spiced Salmon Recipe

Ingredients: 1/2 cup orange juice, 4 salmon fillets (4 ounces each), 1 tablespoon packed brown sugar, 2 teaspoons sugar, 1

teaspoon baking cocoa, 1/4 teaspoon cayenne pepper, 1/4 teaspoon ground cinnamon, 1/8 teaspoon salt, 1/8 teaspoon

pepper, 1 medium navel orange, thinly sliced, 4 tablespoons butter, melted. Turn the oven on to 400°. In a shallow plate, pour

orange juice and place salmon skin-side up. Allow to stand for 15 minutes at room temperature. In the meantime, combine sugars,

cocoa powder, cinnamon, cayenne, salt, and pepper in a small bowl. Lay the salmon, skin-side down, on a baking sheet covered with paper. Apply a blend of

spices and rub. Place a slice of orange over the salmon and drizzle with melted butter. Bake for 20 to 25 minutes, or until the salmon flakes easily with a fork.
