orange juice and place salmon skin-side up. Allow to stand for 15 minutes at room temperature. In the meantime, combine sugars,
cocoa powder, cinnamon, cayenne, salt, and pepper in a small bowl. Lay the salmon, skin-side down, on a baking sheet covered with paper. Apply a blend of
spices and rub. Place a slice of orange over the salmon and drizzle with melted butter. Bake for 20 to 25 minutes, or until the salmon flakes easily with a fork.
